Stirred into natural yogurt, date paste makes a sweet snack. Date paste is great for making spreads. In Arabic cuisine, date paste is a basic. Besides the sweet semolina pastry Ma'amoul, date paste is also used in savory dishes. Mix some date paste in stewed vegetables or in a couscous pan. Ideally, date paste consists of only one ingredient: high-quality dates, such as Medjoul dates or Deglet Nour dates. These only have to be pureed to a creamy mass - and the date paste is ready. With viscous products like dates, low-powered blenders tend to overheat. To prevent your blender from starting to smell and smoke, you can soak your dates in water for a few minutes beforehand. This will make the date paste a little thinner, but your blender will thank you for it.

A total of 8.2 million tons of dates were harvested in 2017. The top 10 producers harvested 89 percent of this amount. Most of the dates are processed directly in the countries of origin. Along with the dried fruits, date oil and date liquor are also widely produced.

Jordan Valley

Der Großteil der Medjool-Datteln aus Isreal kommt aus dem sogenannten "Jordan-Valley". Der Jordan ist ein abgesenkter Fluss, der von Felswänden umgeben ist. Durch die Reflektionen erreicht das Tal Temperaturen weit über 40 Grad Celsius.

Rebpflege

Damit die Medjool-Datteln schön groß werden, werden die Reben frühzeitig ausgedünnt. So stehen weniger Datteln einer Rebe in gegenseitiger Konkurrenz und die einzelnen Datteln haben mehr Nährstoffe, um sich voll auszubilden.

Reifung

Erst wenn die Datteln von allen Seiten leicht durchsichtig sind, werden sie geerntet.

Eine brilliante Idee

Bei unserer Reise zur Plantage von "Natura Dates" haben wir Jeannie kennengelernt. Sie setzt Eulen ein, um Schädling im Bio-Anbau zu bekämpfen und hält damit die Dattelbäume gesund.

Ernte

So sehen die Medjool-Datteln direkt nach der Ernte aus.

Bonbonera

Die Bonbonera ist die saftigste aller Medjool-Datteln. Sie wird direkte nach der Ernte schockgefroren und überspringt dadurch den Trocknungsprozess.

Trocknung

Bevor die Medjool-Datteln in die bekannten 1- oder 5kg-Kartons gepackt werden, werden sie getrocknet. Die Zuckerkonzentration erhöht sich, wodurch die Dattel haltbar und transportfähig wird.

Sortierung

Nach der Trocknung werden die Datteln sortiert. Man unterscheidet zwischen Jumbo, Large und Medium. Im Allgemeinen gilt: je größer, desto teurer! Geschmacklich nehmen sich die Größen aber nichts.

Qualitäten

Das wichtigste Qualitätskriterium bei Medjool-Datteln ist die Loose-Skin-Rate. Sie gibt den prozentualen Anteil von abgeplatzter Dattelhaut wieder. Je weniger, desto teurer.

A MUST for my desserts.

A lover of vegan desserts, date paste is a must in the kitchen for my creations. I am experimenting with different recipes and unfortunately 1kg does not seem to be enough. Next time I will have to order more. Much cheaper to easy to use than the classic Medjool Dates I used to use.

Ich finde das Produkt zu trocken und es fehlt an aroma.

Leider ist das dattelmus trocken und hat ausser süsse kaum dattelaroma. Preis ist sehr günstig.
