Origin and name of mung beans

The mung bean originally comes from India and is one of the first cultivated plants of the area. Nowadays, there are over 200 different types of mung beans. Also know as green gram, Lunja beans, or Jerusalem beans, these little green beans have many different names;  their sprouts are very similar to those of soybean and are therefore often confused and even incorrectly labelled. However, soybeans and mung beans are fundamentally different, and the mung bean sprouts have nothing to do with soy.

Sprout freely your mung beans

In fact, the beans are very good for sprouting – a simple and very healthy way of adding mung beans to your diet! They should be soaked in water for about 12 hours overnight, and you should use at least 5 to 7 times the amount of water, since the beans will greedily drink it up. After that, the sprouts have to be watered two to three times a day, and the jar in which they are hosted should be kept at room temperature. Mung sprouts are very fruitful, as one cup of seeds makes about 7 cups of sprouts! You can harvest the mung bean sprouts after the third day, when the small sprouts start to turn pale purple and have a very tart taste. 

How to use mung beans and sprouts

Before you eat them, mung beans should definitely be cooked, preferably after having been soaked in water overnight. If you forgot, you can also do it in the early morning for the evening: the main thing is that they are covered with water for at least four hours. Does that sound like a lot of preparation? Come on, it definitely is not! After the soaking, the rest is really easy peasy: place a pot of water on the stove, add the beans, and let them cook for about 30 minutes. This being done, your mung beans are ready to be eaten and used for all your favourite dishes.
