In a traditional risotto, olive oil, Parmesan, and butter are a must, but if you want, you can easily make delicious vegan risotto without butter, and with nutritional yeast in the place of grated Parmesan. When it comes to the ingredients, there is only one rule: use what you like! What matters are timing and preparation.
