- oatmeal: 50 g
- vegan protein powder (or more oatmeal): 15 g
- baking powder: 1 tsp
- Chia seeds: 1 tsp
- banana: 1/2 banana
- Oat drink: 120 ml
- Ceylon cinnamon: 1 tsp
- coconut yogurt: 40 g
- vanilla pudding powder: 1 tsp
- coconut blossom sugar: 1 tsp
- cinnamon: 0.5 tsp
Preheat your oven to 180 degrees.
Mix the first 7 ingredients for the Baked Oats in a blender until you reach a sponge cake-like consistency.
For the filling, mix coconut yogurt, vanilla pudding and some cinnamon in a small bowl.
For the topping, mix the cinnamon and coconut blossom sugar.
Put about 2/3 of your oatmeal mixture in an oven-safe bowl and cover the layer with a thin layer of the cinnamon-sugar mixture.
Then place your filling in the center and cover with the remaining batter.
Finally, top with the remaining cinnamon-sugar mixture and bake for about 15-20 minutes.
As a last step you can make a "swirl" of coconut yogurt.
