
Hmmm, we have again a really delicious recipe for muffins for you! The nut muffins score with the special ingredient Küsbispüre and delicious spices. Fine, noble nuts are used, which provide the certain crunch. The muffins taste best when they are fresh from the oven. You can enjoy them as a snack, dessert or even a special breakfast. We hope you enjoy making them!
Ingredients (for approx. 15 nut muffins):
- 250 g spelt flour
- 2 tsp baking powder
- 1/2 tsp baking soda
- 200 g pumpkin
- 150 g (soy) yogurt
- 150 g coconut blossom sugar
- 2 hand raisins
- 1 handful walnut kernels
- 1 handful pecan nuts
- 1-2 tsp cinnamon
- 1 tsp vanilla
- 1 tsp. chai spice (optional)
- 200 ml (almond) milk
- 100 ml mineral water
- 80 ml oil
Garnish:
- 100 g powdered sugar
- 1 tablespoon pumpkin puree
- 1/2 tsp vanilla
- 2 tbsp lemon juice
Preparation
First you should cut the pumpkin into pieces and cook in boiling water until soft. Then you can puree in a blender . Then you should sift the flour and mix together with baking powder, baking soda, cinnamon and chai spice.thereupon you chop the nuts. Add milk, oil, pumpkin puree and yogurt to the dry ingredients and mix slowly. You should also add the nuts and raisins and finally fold in the mineral water. Divide the mixture into muffin cups (2 tablespoons each) and bake at 200°C for about 30 minutes. In the meantime you can make a smooth mixture from the powdered sugar, some pumpkin puree, vanilla and lemon juice and fill it into a piping bag. You can garnish the cooled muffins with it afterwards. Enjoy your meal!
