Pumpkin Smoothie Bowl with Granola from the Pan

Pumpkin time is definitely the best time of the year. And pumpkin is not only good as a soup or baked, but also in a smoothie it tastes super delicious and is a good variety. Topped with still warm granola from the pan the perfect breakfast for the autumn

For the granola:

Cut pumpkin into small pieces and bake in the oven at 200°C for about 20-30 minutes until soft. In the meantime, heat coconut oil in a pan and add the ingredients for the granola apart from the maple syrup. Stir well to make sure everything is covered by the oil and then toast, turning occasionally, on all sides. Finally add the maple syrup and stir well, remove from heat and let cool slightly. Add the bananas, baked squash, vegetable drink (a little more or less depending on the consistency you want) and a good pinch of cinnamon to a blender and blend for about 30 seconds until you have a creamy smoothie. Now pour the smoothie into a bowl and serve with the granola. Super fits to this also some pumpkin seed puree.
