
Especially in summer, there are great fruits that are perfect for a quick cake. In this recipe we use blueberries (and red fruit jelly), but you can actually take almost any other fruit, depending on what you have at home. It's quick and easy to make this juicy treat, and we'll show you how!
Ingredients:
- 250g butter
- 150g coconut blossom sugar
- 4 eggs
- 250g flour
- 1 sachet baking powder
- 250g ground almonds
- 1/8 liter milk
- 200g blueberries
- grated lemon peel
- 1-2 teaspoons of acai powder
Preparation
First, beat the eggs with the butter until foamy and add the sugar. Beat everything for 5 minutes until creamy. In the meantime, mix the dry ingredients, except for a tablespoon of flour, adding some of the dry ingredients and then some milk. Keep doing this until all the ingredients are used up. Mix the blueberries with the remaining flour. Now divide the dough into two bowls. In one bowl put the acai powder and stir it in and in the other one put the lemon zest and the blueberries. Preheat the oven to 180° and grease a loaf pan with coconut oil. Now fill the dough alternately into the form. With a fork or a shish kebab, pull through the dough a few times. Bake the cake in the oven for 35 minutes. You can also make the cake with any other fruit and replace the acai powder with matcha powder. This combination tastes especially good if you use cherries. Or if you have frozen berries or even red fruit jelly at home, they are also great for this cake (as you can see in the picture). If you want to add a little more sweetness, you can decorate the cake with powdered sugar or icing.
