- Spelt flour : 250 g
- Rice protein : 150 g
- Baking powder : 1 sachet
- Overripe banana : 200 g
- Erythritol or sugar : 220 g
- Peanut butter: 50 g
- Neutral cooking oil : 150 ml
- Vegetable milk: 350 ml
Preheat the oven to 175°.
Mix all dry ingredients together in a bowl.
Place wet ingredients in a stand mixer and mix well (also works with a blender).
Add the mixture to the dry ingredients and blend until smooth.
Pour into a lightly greased bundt pan and bake for 60 to 70 minutes (test with a stick in between. I always cover the cake with baking paper after a while so it doesn't brown so much.
Let it cool down well (best overnight). If you like, you can decorate it.
