Pesto rosso – what is that?

Quick Italian lesson: "rosso" means "red". Our pesto rosso's name comes from it's colour and the ingredients used, in this case, dried tomatoes and fruity tomato paste. We add a bit of sunflower oil, cashews, tofu, basil, some garlic and a pinch of salt and our red pesto is ready!  But now back to the question of what pesto actually is! Pesto comes from Italy and is an uncooked, pasty sauce that is usually served with pasta. The first traditional pesto was made as early as 1863 and is thought to be derived from a Roman herb and cheese sauce - or a medieval variation of a standard Roman condiment.
